Groundnut oil, also known as peanut oil or groundnut oil, is extracted from peanuts. The oil is a clear, light-coloured oil, which smells a little like peanuts, which can be heated to high temperatures. This means that the oil is perfect for, for example, stir-frying or for frying doughnuts. Since groundnut oil is relatively low in saturated fatty acids, this oil does not become rancid very quickly. Groundnut oil contains 20-40% polyunsaturated fatty acids. When the temperature is below 12°C, the oil becomes thick and cloudy. This does not, however, affect the oil’s quality and flavour. Groundnut oil is mainly used in deep-frying and stir-frying, plus it is perfect for frying doughnuts.
